I ordered the Ken Onion 8″ Chef’s Knife from BB&B last week (with coupon of course) and it has yet to arrive. While shopping at TJ Maxx for some new bamboo cutting boards to prepare for the arrival of my new baby I happened upon a reasonably large selection of Shun Classics including this little beauty for $40. I spent about an hour walking around my kitchen looking for things to cut and comparing it to my now-retired Henckels. The difference in the blades is astonishing! This knife is unbelievably precise and comfortable to use. Now I am worried that the Ken Onion which I ordered won’t be as comfortable as the Shun Classic. For those who are concerned about the price please remember that Shun will sharpen your knives to factory specifications for the life of the cutlery. Break the $60 price down over 10 (or 20…0r 40?) years and it will seem like an absolute bargain to have some of the finest kitchen steel that money can buy.

This is an excellent paring knife. I find it is essential for work cutting and cleaning small areas of fruit and vegetables in my kitchen. I particularly like it for thinly and evenly slicing small cloves of garlic. Where as the large cloves of garlic I like to use the 8″ Shun Chef knife. These knives are well balanced and sharp which make facile food preparation.
I do like the look of these knives too. The paring knife really feels good to hold and use just as the larger handled Chef knife. The paring knife handle is comfortable for my large hands; but it would be fine for someone with small hands as it is not a thick handle. I read the Cooking for Engineers article on testing Chef knives http://www.cookingforengineers.com/article/129/Chefs-Knives-Rated and this article introduced me to other knives. The only other knife I considered getting was the MAC; but I prefer the handles and feel of the Classic Shun knife series. Costco.com sells their kirkland brand of Kai (Shun brand) knives; but I like the Classic Shun knife handles much more which are sold on Amazon.
